BANANA CAKE

2-1/4 cups cake flour

1-1/4 tsp baking powder

1-1/4 tsp baking soda

1/2 tsp nutmeg

1 tsp salt

1-1/4 cups mashed ripe bananas

3/4 cup shortening

1-1/3 cups sugar

3 eggs

2/3 cup buttermilk

 

Mix together flour, baking powder, soda, nutmeg and salt, set aside. Prepare bananas as indicated, set aside. Cream shortening in large bowl. Add sugar in three lots, creaming after each addition. Add eggs one at a time, creaming after each. Cream until light and fluffy. Add the bananas and mix. Now add about 1/3 of dry mixture and 1/3 of buttermilk alternately until all ingredients are added, mixing well between each addition. Beat for 1 minute. Grease baking pan (s). Pour into 13x9x2 inch or two 9 inch or three 8 inch layer pans. Heat oven to 350F/175C. Bake 13x9 pan about 45 - 50 minutes. Layer pans about 35 - 40 minutes or until done.
