CHEDDAR BEEF LOAF
1 kg lean ground beef (approximately) 2 lb
375 ml soft bread crumbs 1-1/2 cups
50 ml minced onion 1/4 cup
50 ml fine chopped green pepper 1/4cup
125 ml salad dressing 1/2 cup
30 ml barbeque sauce 2 tbsp
2 eggs, beaten
227 gm cheddar cheese, medium or old 1/2lb
Combine meat, bread crumbs, onion and peppers.
Add salad dressing, barbeque sauce and eggs; mix lightly.
Cut cheese into 3/4" (2 cm) cubes; stir into meat mixture.
Pack into a foil lined 9"x5"x3" (23x13x7 cm) loaf pan.
Bake at 350F/180C for 70 minutes.
Pour off fat.
Let stand 30 minutes before removing from pan.
