CHRISTMAS PUDDING AND FOAMY SAUCE

(Great Grandma’s recipe)

 

1 lb currants

1 lb raisins

1/2 lb mixed fruit peel

1 cup brown sugar

1/2 to 2/3 lb suet, to richness desired

2 eggs

1 tsp baking soda

1/2 tsp ground cloves, to taste

1/2 tsp ground allspice, to taste

1/2 tsp cinnamon, to taste

1 tsp nutmeg, to taste

1 tsp salt

1 cup sour milk

flour

 

Mix all ingredients with enough flour to make a fairly stiff batter.

Place in pan and steam for 3 hours.

 

Foamy Sauce:

1/2 cup margarine/butter

3/4 cup confectioners sugar

1 egg

1 tbsp vanilla extract or 2 tbsp sherry

OR 1/2 cup PARSNIP WINE

 

Work or cream margarine/butter then gradually work in sugar until smooth.

Beat egg in separate bowl until creamy.

Stir egg and liquid into margarine/sugar mix.

Heat over boiling water, stirring constantly until warm and thick as heavy cream.
