COCONUT OAT THINS

 

1-1/2 cups rolled oats (375 ml)

1/2 cup margarine/ butter, melted(125 ml)

1 cup packed brown sugar (250 ml)

1 tsp vanilla (5 ml)

1/2 cup flaked coconut (125 ml)

1 tbsp granulated sugar (15 ml)

1 tsp baking powder (5 ml)

1/2 tsp salt (2 ml)

 

In large bowl, stir together rolled oats, brown sugar, coconut, baking powder and salt. Stir in margarine/butter and vanilla just until blended.

Spread evenly in ungreased  13x9"(3.5 L) cake pan.

Press firmly with back of spoon.

Sprinkle with granulated sugar.

Bake in 300F/150C oven for about 25 minutes or until golden.

Let cool on rack for 5 minutes before cutting with sharp margarined knife.

Let cool completely before removing from pan.

Makes about 40 cookies.
