DALE'S SALSA

 

5 lb tomato (10 large) firm ripe, peeled, cored and chopped

1 lb onion, chopped

1 lb (6 large) fresh mild green chili peppers

4 jalapeno chili pepper (more for hot)

5 to 6 green/red peppers

1-1/4 cups cider vinegar

2 tsp salt

 

Combine all ingredients in a pot.

Bring to a boil over high heat.

Reduce heat and simmer, uncovered, stirring occasionally, until thickened.

Seal in jars until required for use.
