HOMEMADE ROOT BEER

(A Christmas tradition but we haven’t been able to find the extract for the last two years - if you can find it, please let me know where.)

Instructions for 1/2 batch:

157 pressure type bottles (7 oz)

3/8 tsp dry yeast

2-1/2 lb white sugar

1/2 bottle Hires Root Beer Extract

352 oz lukewarm water

Wash bottles well and rinse with clear water.

Sprinkle yeast on top 1/2 cup lukewarm water.

Set aside. Put sugar in 2-1/2 to 3 gallon pan.

Pour Hires Root Beer Extract over top.

Add water and stir thoroughly.

Mix yeast and add to pan.  Stir well.

Using 1 cup measuring cup, fill bottles to about 1/2 to 3/4 inches from top. Cap.

Store bottles on their sides in a cool place.

Test periodically until desired fizz is reached. (1 - 3 weeks)
