MEXICAN MEAT BALLS with CHILI TOMATO SAUCE

 

Mexican Meatballs:

1 lb ground beef

1/4 cup white corn meal

1 egg

1 clove garlic, minced

1 small onion, minced

1-1/4 tsp coriander seed (optional)

1-1/4 tsp salt

1/2 tsp pepper

 

Chili Tomato Sauce:

Mix beef, corn meal, egg, garlic, onion and seasonings.

Shape into 1/2 to 3/4 inch diameter balls.

Drop into boiling CHILI TOMATO SAUCE.

Cover and simmer 5 minutes.

 

CHILI TOMATO SAUCE

 

Serve with MEXICAN MEAT BALLS

1 tbsp fat

1 small onion, chopped

1 to 3 cloves garlic, minced

1/2 cup chopped mushrooms

2 to 3 tbsp chili powder

3 cups tomato juice

salt

 

Melt fat in large saucepan. Add onion, garlic and mushrooms, and cook slowly until lightly browned. Add chili powder, tomato juice and salt to taste. Cook 10 minutes.

Use with MEXICAN MEAT BALLS
