MOM"S SHORTBREAD

(Mom's melt-in-your-mouth shortbreads)

 

2 cups margarine/butter

1 cup sugar

1/4 tsp vanilla

4 cups all purpose flour

 

Cream margarine/butter with sugar, blend well.

Add vanilla.

Add flour in 4 portions and mix well after each addition.

Turn out on to mixing board and knead until all cracks have disappeared.

If you wish you may roll out to about 3/16" thick and use cookie cutters.

Otherwise, divide dough into 3 parts, roll into about 2" rolls and wrap in wax paper.

Chill in the refrigerator for at least 1 hour.

Unwrap and lay on cutting board.

Cut off 1/4" slices.

Place cut pieces, from either method, onto cookie sheets.

Prick 3 or 4 times with a table fork.

Bake in moderate oven, 350F/175C, for 20 to 30 minutes, or until very light brown.

Cool before storing.
