MUSTARD PICKLES

(Al's mother)

 

8 quarts/9.1 L cucumbers

1/2 cup salt

3 lb onions (1.36 kg)

vinegar, as needed

1 cup flour

1 tsp turmeric

1-1/2 tsp dry mustard

2 lb white sugar (0.9 kg)

 

Peel cucumbers, remove seeds and chop. Sprinkle with the salt. Let stand overnight. Drain. Chop onions finely and add. Cover with vinegar and cook 1/2 hour. Mix flour, turmeric, dry mustard and a little vinegar and add to first mixture. Add white sugar. Simmer a few minutes and put into jars.
