MYSTERY CREAM CHEESE PECAN PIE

 

1 pie crust shell, unbaked

1 pkg cream cheese, softened 250 g

1/3 cup granulated sugar 75 mL

4 eggs,  divided 4

2 tsp vanilla, divided 10 mL

1/2 tsp salt 2 mL

1 cup coarsely chopped pecans 250 mL

1 cup golden corn syrup 250 mL

1/4 cup packed brown sugar 50 mL

 

Prepare 1 pie crust shell (9 in./23 cm).

In small mixer bowl beat cream cheese, granulated sugar, 1 egg, 1 tsp (5 mL) vanilla and salt until smooth.

Pour over bottom of prepared crust.

Sprinkle pecans over cream cheese layer.

In small mixing bowl combine corn syrup, brown sugar, 3 eggs and 1 tsp (5 mL) vanilla. Blend well.

Gently pour mixture over layers in pie crust.

Bake in 425F/220C oven 10 minutes.

Reduce heat to 300F/150C and bake 20 to 25 minutes longer or until knife inserted in center comes out clean. Cool.

Chill well before serving. Makes 6 to 8 servings.
