OATMEAL RAISIN COOKIES
(My favourite oatmeal cookies)
1-1/4 cups all purpose flour
1 tsp baking soda
1 cup margarine/butter, softened
1/4 cup granulated sugar
3/4 cup light brown sugar, firmly packed
1 pkg Jello Vanilla Instant Pudding
4 serving size
2 eggs
3-1/2 cups oatmeal, quick cooking
1 cup raisins (optional)
Mix flour with baking soda.
Combine margarine/butter, both sugars and pudding mix in large bowl and beat until smooth and creamy.
Beat in eggs.
Gradually add flour mixture.
Stir in oats and raisins, batter will be stiff.
Drop by rounded measuring teaspoonfuls onto ungreased cookie sheets, about 2" apart.
Bake at 375F/190C for 10 to 12 minutes
Makes about 5 dozen.
