ORANGE LOAF

 

2 cups sifted cake flour

1-1/4 cups sugar

1-1/2 tsp baking powder

1 tsp salt

1/2 cup vegetable shortening

1/2 cup orange juice

1 tbsp grated orange rind

1/2 to 2/3 cup eggs

 

Mix flour, sugar, baking powder and salt in mixing bowl. Add shortening, orange juice and rind. Beat 2 minutes at slow speed or 300 strokes by hand. Add eggs and again beat 2 minutes. Turn into greased loaf baking pan

(9-1/4x5x2-3/4 inches). Bake in slow oven 325F 1-1/2 hours.
