PEPPERMINT CREAMS

 

3-1/2 cups confectioner's (icing) sugar

1 egg white

lemon juice

peppermint extract

 

Put icing sugar in a bowl.

Add egg white and mix.

Knead well with your hands.

Add a little lemon juice and peppermint extract.

Knead again.

You may need to add more icing sugar to make a very dry, firm mixture.

Roll out the mixture with a rolling pin.

Cut with a small cutter into candy sized shapes.

Arrange on a plate and allow to harden.
