POTATO DOUGHNUTS

 

6 cups all purpose flour

7 tsp baking powder

1 tsp salt

1 tsp nutmeg

3 eggs, beaten

2 cups sugar

1-1/2 cups warm mashed potatoes

6 tbsp melted shortening

3/4 cup milk

Shortening for deep fat frying

 

Mix flour with baking powder, salt and nutmeg.

Beat eggs, add sugar, potatoes and melted shortening.

Continue beating.

Combine milk with egg mixture.

Add dry ingredients and mix only until flour is completely moistened. Chill.

Place 1/3 of dough on lightly floured cloth.

Sprinkle surface lightly with flour and roll to 1/2" thickness.

Cut with floured doughnut cutter.

Fry in hot deep fat, 360 to 370F/182 to 187C, until golden brown.

Drain on absorbent paper.

Roll in granulated or confectioners' sugar, if desired.

Makes about 4 dozen doughnuts.
