PRACTICALLY PERFECT CHOCOLATE CHIP COOKIE

2-1/4 cups flour
1 tsp baking soda
1 tsp salt
3/4 cup white sugar
3/4 cup dark brown sugar, packed
1/2 lb margarine, room temperature
1 tsp vanilla extract
2 large eggs
1 12 oz pkg semisweet chocolate chips
Mix flour, soda and salt in small bowl. Set aside.
Mix sugars together briefly, then add the margarine in blobs, first at slow speed and then at high. Beat until pale light and very fluffy.
Add vanilla, first at slow then high speed for a couple of seconds.
Add eggs one at a time.
When finally beaten the mixture should look creamed, not curdled.
Add dry mixture 1/2 cup at a time, mixing at slow speed, then high speed for a few seconds. Scrape down the bowl's sides, add the chocolate chips, and mix at low speed for about 10 seconds. Mix thoroughly.
Put tablespoons of the mix on ungreased cookie sheets.
Bake in 375F oven until cookies are pale golden brown (9 minutes in electric/10 to 11 in gas). Remove and let them cool on a rack.
Makes about 40 medium sized cookies.
