RHUBARB COMPOTE

 

1 cup granulated sugar/250 ml

1/4 cup water/50 ml

6 cups chopped rhubarb/1.5 L

1 strip orange rind

1 cup sliced strawberries/250 ml

 

In top of double boiler, over direct heat, b

ring sugar and water to a boil.

Place over boiling water in double boiler.

Stir in rhubarb and orange rind.

Cover and cook over gently boiling water, without stirring, for 15 to 20 minutes or until tender.

Turn off heat; let cool in pan over hot water. Chill

To serve, remove orange rind; gently stir in strawberries. High source fiber.
