STRAWBERRY GLAZE PIE

9" baked pie shell

4 cups fresh strawberries

3/4 cup water

3 tbsp cornstarch

3/4 cup granulated sugar

1/8 tsp salt

1 tsp lemon juice

 

Wash, drain and hull berries.

Arrange 3 cups of the choicest berries in pastry shell.

Partly crush 1 cup berries, add water and simmer 3 to 4 minutes.

Strain and, if necessary, add water to make 1 cup of juice.

Combine cornstarch, sugar, salt and lemon juice and add to juice.

Bring to a boil.

Cook until thick and clear.

Pour over berries in pie shell and let cool.

Garnish with whipped cream if desired.
