SWEET DOUGH ROLLS  

(great for dinner rolls)

 

2 cups milk
1 egg
1 tbsp dry yeast
1 tsp salt
1/4 cup sugar
5-1/2 to 6 cups all purpose flour
1/4 cup shortening

Scald milk and cool to lukewarm.
Soften yeast in lukewarm milk.
Cream sugar and shortening together.
Add well beaten egg, salt and milk/yeast mixture.
Add sufficient flour to make a dough soft enough to be conveniently handled and knead until smooth.
Place dough in a lightly greased bowl.
Cover with a damp cloth, leave in a warm place (80-90F/25-30C) to rise until double in bulk.
When light, punch down.
Form it into balls about the size of a walnut and place two in each cup of a greased muffin pan.
Cover lightly and let rise until double in bulk.
Bake in hot oven (400-425F/205-220C) for 20 to 25 minutes.
Yield: About 3-1/2 dozen rolls.
